ICE CREAM A Dessert to which no one says “NO”

     Ice cream known earlier as iced cream or cream ice needs no introduction and is one of the most sought after dessert all around the world. It is usually made from dairy products, such as milk and cream, and also often combined with fresh or dry fruits and/or other ingredients like colours and flavours. It is normally sweetened with sucrose, corn syrup, cane sugar, beet sugar, and/or other sweeteners.

   The mixture is intimately stirred to incorporate air spaces and cooled below the freezing point of water to prevent formation of ice crystalswhich gives an uneven texture. The result is a smooth, semi-solid foam that is solid at very low temperatures (<2 °C) and turns more liquidized as temperature increases. With the advent of health foods, analogues made from dairy alternatives, such as goat's or sheep's milk, or milk substitutes (e.g., soy milk or tofu), are available for those who are lactose intolerant, allergic to....
