Misana’s Recipes: Coconut and coriander fish, Tri colour salad pizza, Veggie pie with sweet potato mash and Ceasar salad with crispy chicken

1. Coconut and coriander fish

Ingredients

Red curry paste 1 tbsp

Coconut milk 200 ml

Basa fillet 1,skinless

French beans 50 gms,blanched

Fish sauce a little

Lime ½, juiced

Coriander a small bunch,chopped

Salt and pepper to season

Basmathi rice to serve

Lime wedges to serve

Cooked prawns 2 tbsp

 

Method of Preparation

  Heat the curry paste with a splash of coconut milk in a shallow pan. Fry the paste for a minute then add the rest of the coconut milk and simmer for a minute. Add the basa and cook for about 7-9 minutes until just cooked through,adding the beans and the cooked prawns at the last minute. Stir in the fish sauce, lime juice and the coriander. Season to taste and serve with boiled rice and extra lime wedges.
