Green tea is prepared from the leaves of the Camellia sinensis plant, the leaves are plucked, slightly withered and then immediately cooked to preserve the green quality and to prevent oxidisation. As a result of these methods, green tea contains higher concentration of chlorophyll, polyphenols and antioxidants than other tea types. Green tea has been consumed as beverage for centuries in China and India, but has recently gained popularity in the western countries. Tea is the second most consumed beverage in the world, 78% of the tea consumed worldwide is black and only about 20% is green.
