Cauliflower is a member of cruciferous family. The name of this vegetable has been derived from the words - Latin caulis (Cabbage) and flower. Cauliflower is also known as ‘Phool Gobi’ in Hindi and Marathi, ‘Kovippu’ in Tamil, ‘Gobi Puvvu’ in Telugu, ‘Fool kobi’ in Gujarati, ‘Phool Kopi’ in Bengali and ‘HooKosu’ in Kannada.

    Cauliflower is one of the vegetables in the species Brassica oleracea and belongs to the family Brassicaceae. This wonderful veggie is a family member of broccoli, cabbage, kale and collards. Mainly, the head part (called ‘curd’) of this vegetable, which consists of undeveloped flower buds or inflorescence meristem, is eaten in raw, roasted or cooked form.

   This head part or curd is surrounded by coarse and ribbed leaves which protect the head area from sunlight and thus delay chlorophyll process. Small tender leaves....
