Spaghetti with chicken, cherry tomatoes and basil
Ingredients
Spaghetti 400 gms
Olive oil 2 tbsp
Garlic cloves 4(chopped)
Chilli flakes a pinch
Cherry tomatoes 400 gms
Lemon juice 2 tbspoon
Boneless chicken 700 gms(cooked adding sufficient salt)
Lemon zest 2 tsp
Method
Boil the spaghetti in a pan of salted water following pack instructions, then drain .In the meantime, heat 2 tbsp of extra virgin olive oil in a frying pan.Add chopped garlic cloves and chilli flakes. Cook until pale golden then add cherry tomatoes. Cook for 3-4 minutes on a high heat until the tomatoes start to break down a little. Add 2 tbsp of lemon juice and cook further for 2 minutes.Remove from the heat and stir in the cooked chicken to warm through. Mix the pasta in the warm pot with the sauce, 2 tbsp lemon zest and 3 tsp capers and toss a handful of chopped basil.....
