1. Butter and jam cookies

Ingredients

Maida 1 ¼ cup

Baking powder ¼ tsp

Salt a pinch

Unsalted butter 1 cup,

chilled and cubed

Sugar ½ cup

Brown sugar ½ cup

Egg 1

Vanilla extract ½ tsp

Smooth peanut butter 1 cup

Salted peanuts ½ cup,

skinned and coarsely ground

Pineapple jam 1 cup

Method of Preparation

  Preheat the oven to 160 0 C. Sieve the flour, baking soda and salt together in a bowl. Put the butter and both the sugars in another bowl and combine using a hand blender until pale and fluffy. Beat in the egg and mix until well-combined. Add the vanilla essence and peanut butter. Add the flour mixture and blend. Stir in the peanuts.
