1. Prawn fried rice

Ingredients

Prawns 800 gms

Salt to taste +extra for marinating

Cornflour for dusting Oil 1 lit Carrot 100 gms,diced

Asparagus 60 gms,diced

Oyster sauce 2 tbsp

Egg 6 nos

White rice 600 gms, cooked and drained

Chicken powder to taste

Soy sauce to taste

White pepper powder to taste

Spring Onion 8nos, finely chopped, to garnish.

 

Method of Preparation

  Lightly marinate prawns with salt for thirty minutes and then roll in a light coating of corn flour. Heat the oil in a thick-bottomed pan until it is very hot. With the prawns in a stainer, place it quickly in the hot oil. When cooked remove and drain on a clean paper towel. Boil the carrots and asparagus in a pot for 2 minutes and remove.
