1. Black bean chilli soup with lime yoghurt

Ingredients

Onion ½ chopped

Garlic clove ½tsp, crushed

Green pepper corns ½tsp, diced

Olive oil ½ tsp

Cumin powder a pinch

Chilli flakes a good pinch

Spice powder a pinch

Tomatoes 100 gms chopped

Vegetable stock 200 ml

Black /kidney beans 100 gms,boiled

Salt and pepper to taste

Yoghurt 25 gms

Lime ½ zested + a little juice

Cheddar cheese 1 tbsp, grated (optional)

 

Method of Preparation

  Cook the onion, garlic and green pepper corns in oil until softened. Add the spices and cook for a minute, then add the tomatoes and stock. Cook for 10 minutes then add the beans and simmer for another 10 minutes.Season to taste. Mix the yoghurt with the lime and top the bowl of soup with a spoonful and some grated cheese, if....
