1. Chicken with coconut and cashews

Ingredients

Oil - 1 tbsp

Jeera seeds - ½ tsp

Onion - 1 (thinly sliced)

Salt - a pinch Ginger - ½ tbsp,finely grated

Garlic - 5 cloves

Cinnamon - 2 small piece

Red chilli - 1 sliced

Coriander - ½ tsp

Turmeric - ½ tsp

Chiken thigh - 4 skinless, cut into small piece

Tomato - 1,cut into small pieces

Coconut milk - 120 ml

Cashew nut - 1 tbsp

Chicken stock - 75 ml

Curry leaves - 1 tbsp

Chopped coriander - 1 tsp

Basmathi rice cooked ,to serve

 

Method of Preparation

  Heat the oil in a frying pan. Add the jeera seeds and cook for a few minutes until they crackle. Add the onion and a pinch of salt and fry until softened. Add the ginger,garlic, tomato,chillies and add the rest of the spices and cook for a couple....
