1. Mini florentina pizzas

Ingredients

Olive oil 1 tbsp

Garlic clove 1, sliced

Tomatoes 150 gm, chopped

Salt & pepper to taste

Spinach 100 gm

Pizza base 2 no, small

Mozzarella ½ ball, sliced

Black olives 4 halved

Eggs 2 Cashew 1 tbsp

 

Method of Preparation

  Heat the oven to 220 degree Celsius. Heat the olive oil in a pan and cook the garlic cloves for a minute. Add the chopped tomatoes and simmer for 20 minutes until thickened. Season to taste and allow to cool. Fry the cashews and keep aside. Blanch the spinach in a pan and then squeeze out any excess water. Put the pizza bread on baking sheets. Spread the tomato sauce over, leaving a thin border uncovered. Divide the spinach, mozzarella, olives and cashews between the pizzas. Bake them for 10 minutes, then crack an egg on each pizza and bake for another 5 minutes.....
