1. Pea Kachoris
Ingredients
Green peas 100gms
Cumin powder ½ tsp
Green chilli ½, finely chopped
Garlic clove 2nos,crushed
Ginger ½’’ piece,grated
Potato 2 nos., medium, peeled and diced
Turmeric a pinch
Coriander leaves 1 tsp,chopped
Butter 1 tsp
Salt & pepper to season
Oil 2 tsp+extra for frying
Mango chutney,raitha and tamarind chutney to serve.
THE KATCHORI PASTRY
Plain flour 150 gms
Oil 2 tbsp
Method of Preparation
To make the pastry, mix 2 tbsp of oil into the flour along with enough chilled water to form a soft dough. Knead briefly, just to form the dough into a ball,then wrap in with a wet neat towel and rest for 30 minutes on the kitchen surface.
