1. Prawn stew

Ingredients

Prawns 20

Vinegar 1tbsp

Black pepper to season (freshly ground)

Star anise 2

Fennel seeds 1tsp

Cinnamon a 2’’ piece

Cloves 6

Cardamom 3

Whole pepper corn 1tsp

Olive oil 2tbsp

Onions 2, finely chopped

Turmeric ¼tsp

Coriander powder 1tsp

Green chillies 4, slit

Coconut milk 2 cups

Coconut water 1 cup

Salt to season

Curry leaves 20

 

Method of Preparation

   In a bowl, marinate the prawns with vinegar and freshly ground black pepper. Roast the star anise, fennel seeds, cinnamon, cloves, cardamom and whole pepper corns in a pan until fragrant. Grind in a blender to make the roasted masala for the stew. In a deep pan, heat a table spoon of oil. Saute the onions and garlic....
