Milk cake
Ingredients: Milk: 1 litre; Sugar: 60 gms; Citric acid: one pinch.
Boil milk in a thick bottom pan for three minutes and add citric acid solution. Continue desiccation until the volume is reduced to 50 per cent of the original milk. Add sugar and desiccate further with fast stirring to obtain dough-like consistency. Transfer the hot dough to greased tray, and cool slowly in an insulated box for 5-6 hrs or cool the bottom of the tray in chilled water to enhance colour differential in top and bottom layers.
