The tropical fruit Banana (Musaceae) is one of the earliest crops cultivated in the history of human agriculture. Currently, Banana is the world’s second largest fruit crop which is highly valued in the food industry because of its various applications. India is the largest producer of banana, contributing to 27 per cent of the world’s banana production. This perennial single harvest plant belongs to the group of world’s largest herbs. During the fruit harvest, the whole plant is decapitated so that the young suckers can replace the mother plant. Apart from its fruit, banana is highly valued for its by-products, that is, leaves, inflorescence, pseudostem, fruit stalk (floral stalk/rachis), rhizome and peels. These by-products are used in various food and non-food applications. Due to its low-cost, banana serves as a valuable food source in developing countries, like India.
